Galette Des Rois: A French Tradition

This year, I wanted to recreate the celebration of Galette Des Rois I enjoyed growing up in France.
The tradition involves hiding a feve (small ceramic) in the cake, and once the feve is found when served, the person with the feve in their cake is crowned king for the day. If an adult finds the feve, they became the next person designated to buy a galette from the bakery.

When I decided to make my own, I wanted to make the galette all natural, and as healthy as possible so I chose to make the almond flour myself, and make my own puff pastry.IMG_8713IMG_8705

Galette Des Rois

2 sheets puff pastry ( I made my own using Ashley’s method)

3/4 cup almond flour ( I grind my own using the Vitamix)

1/2 cup sugar

1 egg

1 tsp vanilla extract

1/2 tsp orange blossom water

egg wash: 1 egg + 1 tsp water

Cut two identical circles out of the sheets of puff pastry and place in the freezer while you continue the rest of the recipe.

Mix the almond flour, sugar, and vanilla and orange blossom extract together. Add the egg and mix to incorporate into the filling.

Create the egg wash my adding the water to an egg in a small bowl, and whisking to combine.

Remove the sheets of puff pastry from the freezer, and preheat the oven to 350 degrees.

On a baking sheet lined with parchment paper place one of the circles of puff pastry.

Spread the filling out evenly leaving a small rim around the edge of the circle. Brush the egg wash on the rim of the circle, and place the other sheet of puff pastry on top.

Use your finger to press the two sheets together around the edges, and brush the top of the pastry with the egg wash.

Using a knife, make 4 small holes in the top of the pastry to allow for it to expand.

Bake for 30-35 minutes until golden brown.

Serve warm, or room temperature, and remember to make a paper crown for the king.
